Renaissance cuisine

“From its hilltop location, Castello di Gabbiano dominates the splendid region of Chianti Classico in Tuscany.”

The castle was built at the beginning of the Renaissance on the orders of the famous Florentine aristocratic family, the “Bardi,” and later extended by the “Soderini.”
Already in the 14th century, the dishes prepared in the kitchen of our castle filled all the rooms with  the ancient and unmistakable scents and aromas of the game, stuffed with oriental spices and cooked directly on the bare flame, that only aristocrats could afford.

You will prepare various original recipes from those days, recipes that our chef has researched and translated from the archaic Italian specially for you, such as Frittelle con fiore di Sambuco, rice cooked in almond milk or, for the more refined palate, hare stuffed with candied fruit and oriental spices.

You will have fun making these historic dishes with our chef, and later taste them in the sumptuous dining room of the castle, accompanied by our excellent wines.

The prices for all the package include the three cooking courses, meals with wine, and overnight stays with breakfast at the Castle for three nights.
