Il Cavaliere offers a cuisine which respects tradition and the typicality of the territory in all its flavours, and in the careful choice of the ingredients, selected from among the region’s producers or cultivated directly on the castle grounds.
The cooking processes are classical but are also offered in lighter versions.
The menu, which offers limited but varied choice, is changed regularly. Paolo's wonderful risottos and, of course, the Fiorentina steak are always available!
To complete the cuisine, “Il Cavaliere” offers all the wines produced by Castello di Gabbiano, along with a fine selection of wines from other regions of Italy, as well as French and New World wines.
