Food and Wine in Harmony – three day course

Three days at the castle, a stay devoted to the culinary art.  Organized by our hospitality director and guided  by our chef of Il Cavaliere and one of our sommeliers, you will embark on a tasty, entertaining and interesting journey.

“Tuscan Peasant Cuisine, Renaissance Cuisine, Contemporary Creative Tuscan Cuisine, in combination with Wine Tasting and Seminars”


Day 1

Arrival at Castello di Gabbiano

14:00 hours Welcoming aperitif Introduction to Chianti Classico: territory, history and tradition.
Visit to the castle cellars  

16:00 hours Start of cooking course: “Tuscan Peasant Cuisine” You will learn how to create typical Tuscan dishes such as the well known Ribollita (“Tuscan Soup”), Peposa dell’Impruneta (veal stuffed with pepper), Pici con il sugo di cinta senese (homemade spagetti in Cinta Senese sauce) and many others…

Dinner, consisting of the dishes prepared, and wine tasting with our sommeliers.

Day 2


10:00 hours “Wine and Cheese” Seminar on the tasting of wine in combination with the flavours  of cheeses… many curiosities and interesting advice!

13:00 hours Light lunch

15:00 hours Start of cooking course: “Renaissance cuisine.” In the castle’s beautiful kitchen, you will be transported back to the Renaissance and discover how to use unusual aromas and flavours, the little secrets of this cuisine, and you will create dishes such as rice with almond milk or hare with candied fruit and spices.

Dinner at the castle, consisting of the dishes prepared, and wine tasting, with an explanation of the wines of Tuscany from the Renaissance to today.  

Day 3


10:00 hours Wine tasting of our “superTuscan”: our wine expert will tell the story of this wine, the techniques and secrets.  

13:00 hours Light lunch

16:00 hours Cooking course: “contemporary creative Tuscan cuisine.” Together with our chef, you will discover all the secrets behind creating a creative and delicious menu, preparing dishes such as Parmesan basket with wild herbs, citrus fruits and ham, or filet of pork in crust of wild herbs with balsamic vinegar  and tarragon sauce.

The day ends with a meal in the Il Cavaliere restaurant, in combination with our wine, superTuscan.

After dinner, Certificates of participation will be handed out.
