Food and Wine in Harmony
For groups of a minimum of 6 people, we can organise weekly courses for a date of your choice.
A week at the castle, a stay devoted to the culinary art. Organized by our hospitality director and guided by our chef of Il Cavaliere and one of our sommeliers, you will embark on a tasty, entertaining and interesting journey.

Day 1
Arrival at Castello di Gabbiano
16:00 hours: welcoming aperitif and introduction to the course.
Start of cooking course: “Tuscan Peasant Cuisine.” You will learn to create typical Tuscan dishes such as the famous Ribollita (“Tuscan Soup”), Peposa dell’Impruneta (veal stuffed with pepper), Pici con il sugo di cinta senese (homemade spagetti in Cinta Senese sauce) and others….
Dinner, consisting of the dishes prepared, and wine tasting with our sommeliers.
Day 2
9:00 hours: “Chianti Classico today: production, importance and style…” with a visit to the cellars.
10:00 hours: Cooking course: “Tuscan Peasant Cuisine” – second part.
Lunch, consisting of the dishes prepared, and tasting of wines.
Day 3
Morning: Visit to San Lorenzo market in Florence with our chef. Typical lunch at the market in a classic Tuscan trattoria.
16:00 hours: Cooking course “Renaissance cuisine.” In the castle’s beautiful kitchen, you will be catapulted back into the Renaissance, the smells, tastes and little secrets will be tried and practised, you will create dishes such as rice with almond milk or hare with candied fruit and spices. Dinner in the castle, consisting of the dishes prepared, with tasting and explanations about the wines of Tuscany from the Renaissance to the present day.
Day 4
9:00 hours: Visit to our ancient cellars, with explanation of the wine production process and its gradual development.
10:00 hours: Cooking course “Renaissance cuisine” – part two.
Day 5
15:00 hours: Wine tasting of our “superTuscan”: our wine expert will tell the story of this wine, the techniques and secrets.
16:00 hours: Cooking course “Contemporary creative Tuscan cuisine” Together with our chef, you will discover all the secrets in creating a creative and delicious menu, you will prepare dishes such as the Parmesan basket with country salad, citrus fruits and ham, or filet of pork in wild herb pastry with balsamic vinegar and tarragon sauce.
The day ends with a meal in the Cavaliere restaurant, in combination with our wine, superTuscan.
Day 6
10:00 hours: “Wine and cheese.” Seminar on tasting wine in combination with cheese; curiosities and interesting advice!
16:00 hours: Closing course “Marrying food and wine.” In this course, you will learn how to choose the right dish for the right wines, you will create a menu that will marry perfectly with the chosen wines, all served and presented in the beautiful setting of the Castle.
Day 7
9:30 hours: Handing over the certificates of participation and booklets of recipes.
