Gavius

“An ancient name for a modern wine.”

“Gavius,” in imperial times, was the name of the owner of the estate which, indeed, used to be called “Fundus Gavianus,” before adopting the current name, Gabbiano.

A young, modern wine that can be immediately enjoyed, whose complexity of aromas comes from the various vines used, freshness from the natural process of vinification and ageing, and agreeableness from a good balance of body and structure.

Vines
Sangiovese, Cabernet Sauvignon, Merlot.

Ageing
Separate fermentations, in the presence of the marc, at a controlled temperature.  Each wine undergoes malolactic fermentation naturally, in steel tanks. The ageing of the wines can take place in wood or steel, depending on the requirements of each wine, which can vary, depending on the vintage.

The wines are created only a few weeks before bottling, which takes place around a year from the harvest.
