Francesco was born in Piedmont but his family transferred
when he was still a young child to Tuscany.
After his schooling and training as a chef in Florence and some important experiences abroad, Francesco opened his fi rst restaurant Osteria di Rendola at a very young age. Just a few years after, in a joint venture, he founded and run the restaurant Il Beccofi no in Florence.
Very fast Il Beccofi no became one of the most celebrated restaurants in Florence, known for its innovation and quality. The Wine Spectator honoured Francesco in the year 2000 with his photo on the cover sheet and an 8 page article written by James Suckling.
Since then Francesco has brought his cuisine and his many recipes around the world, working as executive chef or consultant in New York, Paris, Hong Kong or Tokyo. Former consultant since a few years in the restaurant “Il Cavaliere” of Castello di Gabbiano estate, in the year 2014 Francesco became Executive Chef of the restaurant.
