Winemaking: maceration on the skins was allowed for 3 hours. Alcoholic fermentation took 20 days at a 15°c controlled temperature. No malolactic fermentation.
Wine-aging: 6 months bottle maturation is recommended.
Tasting notes: a bright yellow colour, sSlightly golden, and with a very intense and persistent perfume. Slight copper sensations of honey and sugared fruits, very fine. To taste it is sweet, warm and smooth, aromatic thanks to the dried fruit, vanilla and honey, full and rich with good persistence.
Pairing: very interesting paired with strong and highly savory flavors like aged (herbed) cheeses and liver. Recommended with dry cakes and cookies with dried fruit, almond and hazelnut: typical tuscan cantucci and panforte.
