First tastings new Oil

From Castello di Gabbiano oil mill, the first considerations on the 2020 olives pressing: a very satisfactory year from the quantity side, many olives, unfortunately the yield is low (under 11%), but the quality of the oil is very good! At the first tastings the 2020 oil, from an organoleptic point of view, is very characteristic, rich in aromas and flavor, with the typical bitter note of our oil. It will be bottled very soon.  

At the oil mill

The pressing of the olives takes place immediately after harvesting at the  oil mill of Castello di Gabbiano. The whole process, which provides for cleaning and subsequent washing of the olives, crushing hammer and for the centrifugal extraction, cold occurs(not over 27°C)… what results, however, offers us very warm sensations on the palate, heart, mind. The new oil is coming!
