cellar: fermentation in progressIn spite of the difficult vintage (a late spring frost, hot and dry summer…) some excellence is coming to the cellar!

We are picking up the second choice (first quality) Sangiovese grapes,  it will then be the turn of Cabernet Sauvignon to  complete the harvest.

In the oldest vineyards the Sangiovese – so delicate, sensitive, capricious but resolute – has unsheathed its defenses and has brilliantly recovered even under stress.

It will tell us about this vintage too. What an extraordinary grape!

The fermentations take place under the watchful eyes of our technicians, they are so energized and focused – punching, délestage, analysis, tasting … it’s the most beautiful time of year there!
