A new label in the family “Le Selezioni di Castello di Gabbiano”. A rosé wine, which contains all the meanings of its latin name, Mŏvĕo. A different way of understanding sangiovese – produced according to the ancestral method – sparkling!

Winemaking: whole grapes hand picked up, are pressed directly with dry ice addition to preserve the noble substances of the must. The must fermentation takes place at low temperature. As soon as the necessary residual sugar is achieved it is bottled through a light filtration to remove the coarse lees. The fermentation is completed in the bottle. In this way we obtain a slight tarnish, consisting mainly of yeast cells, which protects the wine and keeps it fresher and more fragrant.
Wine-aging: minimum three months bottle maturation
Tasting notes: powder pink color. On the nose it is fruity with citrus hints. Great freshness and pleasant on the palate.
Food pairing: easy to drink in any occasion, excellent as an aperitif. It well accompanies fish based dishes, first dishes and salami.
