Cavaliere d’Oro Dark Knight IGT Toscana 2016
The hand-picked merlot grapes. 24 hours contact of the must with the skins at a temperature of 12°C before the the spontaneous alcoholic fermentation started. During alcoholic fermentation 2 daily punching down and 3 déléstage were carried out to facilitate the extraction of noble substances from the skins. After 20-22 days maceration, the malolactic fermentation took place naturally in French oak barrels where the wine then undertook 16 months ageing. The wine is released after one year bottle maturation.
Deep purple color with light, garnet reflections, impenetrable. The wine is a balanced expression of excellent spicy notes on a fruity aromatic base, rich of well ripened fruit, finishing with some vegetal notes. It shows sweet tannins, well in balance with the wood tannins.
