In Tuscany, oil production traditionally accompanies wine production on each farm: this has been the case at Castello di Gabbiano for centuries.A small production of Extra Virgin Olive Oil, which today boasts Protected Designation of Origin status, produced from the olives of different varieties, about 2000 trees in the estate’s 9 hectares of olive groves, harvested and immediately pressed at the estate mill.

A pale straw colour sparkling wine with a very fine and persistent perlage. Classic aromas of bread crust as well as unique mineral notes of flint. The character of the cuvée emerges, conveying yellow fruit, currant, delicate wisteria, and slightly roasted hazelnuts from Piedmont. The palate is crisp, savory, with a good backbone. Combine it with main courses, preferably raw meats, tempura, seafood, and vegetables with intense flavor. White truffle and aged cheeses are always welcome.
